COFFEE SHOPS

In 2011 we opened the doors of our first coffee shop, Cafe u Dvorištu, in downtown Zagreb. Going out for coffee has always been an integral part of life in Croatia; however, at that time, great coffee was not easy to find in Croatia. We still believe that the most amazing thing about coffee is its incredible power to bring people together. All we have been hoping to do is to enrich these daily rituals of gathering together with some tasty coffee. 

ROASTERY

In 2014. we opened the Cogito Coffee Roastery next to our first coffee shop Cafe u Dvorištu. Ever since then our focus has been on sourcing great green coffee and roasting it to its fullest potential. Our coffee program and our skill has evolved, but what has stayed consistent since the beginning is our affinity for seasonal, transparently sourced, and terroir-driven coffees. We want our customers to be able to taste the wonderful diversity of different farming practices, places of origin, types of coffee plants and the idiosyncrasies of each new harvest, while knowing that the coffee they are enjoying has been transparently sourced and paid for fairly.  

BAKERY & BISTRO

Salo is a bakery and bistro focused on sourcing local organic food from small farmers. It is our wish to make delicious food in the local tradition while supporting regenerative small-scale farming. We also own and run our own farm where we grow and forage a portion of the fruits and vegetables, eggs, honey, mushrooms and meat. By practicing regenerative farming ourselves we feel deeply connected to nature and to the other farmers that make our work at Salo and Cogito possible.
